The Mountains to Sea Dirty Martini is about restraint — and revelation. It's built on the wild, grounded journey of our gin: horopito from the mountains, manuka from the riverside, and kelp from the ocean's edge. Stir in a splash of olive brine, and it becomes something deeper — something that echoes with salt spray, low tide, and long exhalations.

This isn’t a cocktail that needs much. Just confidence. A glass. And the kind of stillness where a good story can begin.

Ingredients

  • 60ml Papaiti Mountains to Sea Gin

  • 10ml Dry vermouth

  • 10ml Olive brine

  • Ice

  • Garnish: A plump green olive — or two

How to Make It

  1. Fill a mixing glass with ice.

  2. Add gin, dry vermouth, and olive brine.

  3. Stir slowly until perfectly chilled and whisper-smooth.

  4. Strain into a chilled martini glass.

  5. Garnish with an olive — but just one if you’re telling the truth.

Serve When
