It's built on the wild, grounded journey of our gin: horopito from the mountains, manuka from the riverside, and kelp from the ocean's edge. Stir in a splash of olive brine, and it becomes something deeper — something that echoes with salt spray, low tide, and long exhalations.

60ml Papaiti Mountains to Sea Gin

10ml Dry vermouth

10ml Olive brine

Ice

Garnish: A plump green olive — or two
How to Make It

Fill a mixing glass with ice.

Add gin, dry vermouth, and olive brine.

Stir slowly until perfectly chilled and whisper-smooth.
